3 Ways to Use This $3 Recipe

Bean recipe you can use many ways

If I had a Fairy Godmother she would inhabit my kitchen. But since I don’t reside in a land far, far away, I rely on a well-stocked freezer and pantry to help the magic happen in our household.

Here’s one of my easy, inexpensive, and nutritious favorites:

Cheap and Tasty Beans

1 – 14oz can black beans
1 – 16oz bag frozen carrots, peas, green beans and corn
1/2 - 16oz bag frozen onions and bell peppers
1/8 teaspoon cayenne pepper (optional)
1/8 teaspoon coriander (optional)
1/8 teaspoon cumin (optional)
1 teaspoon olive oil
salt to taste

Sautee frozen veggies and olive oil in a pan over medium heat until tender (about 10 minutes). Meanwhile, rinse and drain the black beans.

When vegetables are tender, add the beans, and seasonings, and mix well. Cook another 5-10 minutes. Remove from heat and serve.

The recipe gets its title from the fact that I often make it when all I have in the cupboard is a can of beans. Our family enjoys eating it in these 3 different ways:

  1. To Power Up quesadillas
  2. On top of ½ cup of rice – add 1/4th diced avocado, diced tomatoes, olives
  3. Inside a whole grain tortilla - top with salsa, 1 Tbsp guacamole

Oh, and the recipe costs a whole $2.91.
