Bursting with Okra

Okra is coming out the ears of most farmers in our area during July and August. Being from the south, I grew up loving fried okra, but I’m always looking for new ways to incorporate it into my menu with a healthier flare.

This recipe has by far been my favorite way to prepare okra without having to dunk them deep in oil to get that crunchy texture I love so much.

This recipe is adapted from Allrecipes.com

Roasted Okra

12-18 fresh okra pods, stem end cut off
Pam spray
1 teaspoons kosher salt, or to taste

1. Preheat an oven to 425 degrees F
2. Arrange the okra slices in one layer on a foil lined cookie sheet
3. Spray with cooking spray and sprinkle with salt
4. Bake in the oven for 10 to 15 minutes
