Trying something new is not always exciting. It can make me feel a little anxious venturing into unknown territory. The deciding factor for me was the picture of the recipe...love pictures with recipes! I bit the bullet and made roasted cabbage. Super easy and has 1g fiber in a cup!

Recipe for Roasted Cabbage with Lemon
1 head of green cabbage
2 T olive oil
2 T lemon juice
salt & pepper
Preheat oven to 450F. Coat your pan with non-stick spray or olive oil. (Next time I’ll wrap my pan in foil)
Cut the head of cabbage into 8 same-size wedges, Then trim the core strip and stem from each wedge and arrange wedges in a single layer on the pan.
Whisk together the olive oil and lemon juice. Then brush the top sides of each cabbage wedge with the mixture and seasoning. Turn cabbage wedges and brush the other side with the mixture and seasoning.
Roast cabbage for about 15 minutes, or until the side touching the pan is nicely browned. Then carefully turn each wedge and roast 10-15 minutes more, until the cabbage is nicely browned.
