Fit in Your Skinny Jeans with these Biscuits and Gravy

Every once in awhile when the weather is the right kind of humid and the lightning bugs come out to play, I find myself craving Southern comfort food. And every once in awhile when I have the time, I give in.

Contrary to what others may think, working at Full Plate Living has helped me enjoy comfort foods more than I ever have before. When I Power Up a dish, I know I’m getting forkfuls of healthy in each yummy bite.

The fact that this kind of food makes it easier for me to fit in my skinny jeans is a fantastic bonus.

The Before

This is how I typically ate biscuits and gravy in college. (I also weighed 20 more pounds back then).

The plate isn’t very full, yet it checks in at 709 calories and 3g of fiber.

The After

This is how I enjoy biscuits and gravy now.

Not only is the plate full, it’s also brimming with color – 427 calories and 15g fiber. I add 1 cup of frozen carrots and peas to the gravy, 1 cup of fresh cherries, and 1 cup of sauteed spinach. And instead of eating one biscuit, I used a whole wheat English muffin, opened up. See more details on our Power Up page.

That’s 40% less calories and 5 times the amount of fiber. And it passed the taste test for a toddler, 3 middle-aged co-workers and my mother-in-law.

Middle Ground

If your family isn’t ready to do the complete makeover, try this simpler Power up instead.

You end up with 10g fiber, and reduce calories to 574. Simply serve your carrots and peas on the side and add a cup of cherries for a sweet taste.
