Holiday Granola Jars

Here’s a delicious, homemade present you can gift to loved ones, neighbors, or even co-workers: Hint of Coconut Granola.  Place it in a jar, add a layer of dehydrated or dried fruit, and tie it with a festive bow. A hand written personal note will only make the gesture so much more meaningful.

  • 7 cups rolled oats
  • 1 cup pecans
  • 1 cup walnuts
  • 1 cup almonds
  • 1 cup coconut
  • 1 cup wheat germ
  • 1 cup water
  • 1 cup canola oil
  • 1 cup brown sugar
  • 2 teaspoon salt
  • 2 teaspoon vanilla

Place dry ingredients in a large mixing bowl and toss. Place water, oil, brown sugar, salt and vanilla in a small bowl and allow the sugar to dissolve.  Pour over the dry mixture and toss gently with your hands until well coated.  Spread on a cooking sheet and bake at 250 degrees until golden brown.  Gently turn with a spatula and brown on this side.  You may turn off the oven and leave the granola to dry out overnight.  Store in a sealed container up to 2 months.  ENJOY!
