Most mornings, before I leave home, I rummage through the kitchen, looking for lunch material. Invariably, there are only two questions on my mind as I go through this ritual:
- First, what can I pack that won’t cost me any time now?
- Second, what can I pack that won’t take any time to prepare when I’m ready to eat it at noon?
I behave like this even on mornings when I don’t have any time pressure. That’s why the title isn’t “Lunch When You’re in a Hurry”. I just don’t want to spend time preparing my food. I want to eat it, and get on with more important things in my life. But even though I have no patience for preparing my food, I still want it to be healthy.
That’s why I love the Full Plate Diet. It’s full of food that can be eaten with very little preparation time. Canned beans with tomato and avocado is a regular for me, because I can pack it in one minute, and prepare it in three. (open can, pour contents into bowl, dice tomato into bowl, dice avocado into bowl, stir)
