Pineapple Whip the Family Will Love

I came across an “almost clone Disneyland Pineapple Whip” recipe on Pinterest. I recently tried it out on my 13 year old nephew visiting me for the summer. His comment “give this recipe to my mother” put a smile on my face.

I did a slight modification to the one blogged about on Around My Family Table. You’re sure to get smiles at your table too. 


Pineapple Whip

1 pineapple, peeled and cored* – dice it up and put in the freezer
1 teaspoon lime juice
2 teaspoons sweetener - agave nectar or honey works great - do it to taste
3/4 cups 1%, skim, soy, or almond milk - unsweetened is even better ;)
1/4 teaspoon vanilla

Pull the pineapple out of the freezer and let it thaw about half way. Put everything in a blender and blend until smooth. You will have to work the pineapple chunks around depending on how frozen they are. This will depend on the type of blender you own too.

Once it is fully bended, your Pineapple Whip is ready to eat! If you have any leftovers, stick it in the freezer for later.
