Powered Up Mashed Potato Recipe

What if you could take the deliciousness of mashed potatoes and combine it with the healthiness of cauliflower? Is such madness thinkable? Possible? Legal?

Alright, well, I’m trying to make this sound exciting. Anyway…here’s a recipe. You can try it out and stuff. By the way, it’s diabetic-friendly!

Here’s what you’ll need:

  • 2 cups coarsely chopped fresh cauliflower florets
  • 1 cup 1-inch peeled red potato cubes
  • 2 tablespoons milk of your choice
  • 1 tablespoon Smart Balance Light Buttery Spread
  • ½ teaspoon garlic powder
  • 1 teaspoon salt, or to taste

Here’s what you’ll do:

In a steamer basket set over boiling water, steam the cauliflower and potatoes together until soft, about 12 minutes. Place the hot vegetables and all remaining ingredients into a food processor, and puree on high for 15 to 30 seconds, or until smooth. Stop the processor before the potatoes become “gluey.”

Now you can start telling people, “I’m a meat and cauliflower potatoes kind of guy.” Let me know how they respond. Seriously…I want to know.
