Here’s what you’ll need:
- 2 cups coarsely chopped fresh cauliflower florets
- 1 cup 1-inch peeled red potato cubes
- 2 tablespoons milk of your choice
- 1 tablespoon Smart Balance Light Buttery Spread
- ½ teaspoon garlic powder
- 1 teaspoon salt, or to taste
Here’s what you’ll do:
In a steamer basket set over boiling water, steam the cauliflower and potatoes together until soft, about 12 minutes. Place the hot vegetables and all remaining ingredients into a food processor, and puree on high for 15 to 30 seconds, or until smooth. Stop the processor before the potatoes become “gluey.”
