Roasted Broccoli

Sometimes a normal food takes on a whole new dimension when prepared a different way. Last week my wife prepared roasted broccoli. It’s simple. It’s easy. It’s a completely new delicious taste for broccoli.


4 cups broccoli florets
1/2 cup pecan halves
3 cloves minced garlic
1-2 tablespoons olive oil
1-2 tablespoons parmesan cheese (optional)
1/2 teaspoon salt


  1. Preheat oven to 425
  2. Rinse and trim the broccoli and put in a bowl. Blanch if you like it more tender.
  3. Crush garlic
  4. Add olive oil, garlic, salt, pecans, and broccoli to mixing bowl
  5. Mix, toss, stir
  6. Spread mixture onto a baking sheet
  7. Place in the oven for 8-10 minutes, or until broccoli is tender
  8. Dish out
  9. Optionally shave fresh parmesan on top
  10. Enjoy and tell your friends
