Quinoa has always been the novelty food that I keep buying and stacking in my pantry. But this last weekend, something changed.
Armed with the purpose of injecting some fiber into a chicken grill night with family, I finally prepared one of my “Food Inspiration” recipes from Pinterest.
In the light of full disclosure, I should point out that I picked this one over other quinoa recipes because it specifically stated that it went great with chicken, which had to be true in order for the family to like it. The dish did not disappoint!
Not a grill master? Here are two other ways to enjoy this quinoa dish:
- As a fiesta bowl (simply add black beans, fresh diced tomatoes and fresh diced avocados).
- As a burrito (add black beans, fresh diced tomatoes, fresh diced avocadoes, top with salsa, and roll in a whole wheat tortilla).
