Supper When You're in a Pinch

Having something handy that can be cooked in under 15 minutes is always a good thing. I discovered that one of my “I don’t have time to be in the kitchen tonight” favorites is Norita's Stew. Here’s how it saves the day.

 

What to have on hand

    * Canned black beans
    * Canned diced tomatoes
    * Canned corn/Canned mixed vegetables


The recipe

I personally like the 1 to 1 to 1 ratio. One can of beans, one can of tomatoes and a can of veggies.  This is enough to feed two people.  If you have a bigger family, try 2 or 3 cans of each ingredient. Feel free to add any other ingredients that would complement the flavor and boost up the fiber.

Dump the can contents in a pan and cook on medium high heat for 10-15 minutes, stirring occasionally. I personally don’t add any seasonings, since the flavors of the canned items are strong already. But garlic powder and Italian seasoning would work very well with the stew.
