This fresh berry topping is the perfect healthy alternative to syrup for pancakes, waffles, and even ice cream, especially if you have diabetes.
1 cup strawberries (fresh or frozen unsweetened)
1/2 cup blueberries (fresh or frozen unsweetened)
1/2 cup blackberries (fresh or frozen unsweetened)
1/2 cup raspberries (fresh or frozen unsweetened)
2 teaspoons honey
Thaw berries if frozen. In a blender on high setting, blend 1/2 cup of strawberries until creamy, about 1 minute. Mix the strawberries with the remaining ingredients. Serve over waffles as is or slightly warm in a saucepan or microwave before serving.
