Beans are a fabulous source of protein in the morning, particularly for those with diabetes. This creamy recipe is perfect as a morning side dish for pancakes, French Toast, and waffles.
4 15-oz cans navy beans (drain and rinse 2 cans)
1 medium onion diced
1 teaspoon oil
1 2.5-oz jar pimentos
1/3 cup cashews , raw pieces
1/2 cup water
2 teaspoons onion powder
1/2 teaspoon garlic powder
- Sauté onions in oil until tender. Remove from heat and mix in pimentos.
- Blend cashews, water, and seasonings on high until creamy.
- Add beans and cashew cream to sauted mixture. Bring to a boil and reduce heat to medium for about 5 minutes.

Pinto beans can be used instead of navy beans.
