Breakfast Beans

Beans are a fabulous source of protein in the morning, particularly for those with diabetes. This creamy recipe is perfect as a morning side dish for pancakes, French Toast, and waffles.

Ingredients

4 15-oz cans navy beans (drain and rinse 2 cans)
1 medium onion diced
1 teaspoon oil
1 2.5-oz jar pimentos
1/3 cup cashews , raw pieces
1/2 cup water
2 teaspoons onion powder
1/2 teaspoon garlic powder

Directions

1. Sauté onions in oil until tender. Remove from heat and mix in pimentos.
2. Blend cashews, water, and seasonings on high until creamy.
3. Add beans and cashew cream to sautéed mixture. Bring to a boil and reduce heat to medium for about 5 minutes.

Tips

Pinto beans can be used instead of navy beans.
