Can Never Get Enough Tomato Cucumber Salad

Tomato Cucumber salad, smashed potatoes, and avocado breakfast

This refreshing salad tastes best in the summer, when tomatoes are in season. Make it a whole meal by serving it with some crusty or toasted whole grain bread. Or serve it as a starter to Mediterranean inspired meals.



Ingredients

  • 4 cups tomatoes diced
  • 1 cup English cucumber (about 1/2)
  • 1/2 medium onion julienne cut
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt (to taste)
