This marianted garbanzo kale medley is the perfect side dish to any Italian fare. Or a great filling for a pita. Or yummy with eggs. Or just plain. Try it. It's delicious in many different ways.
1/2 head kale (3 cups chopped)
1/2 cup parsley , chopped
2 15-oz cans garbanzo beans , drained
1 clove garlic , minced
2 tablespoons olive oil
1/2 teaspoon salt
1 tablespoon lemon juice
Mix oil, salt lemon juice and garlic and let sit while you chop the kale and parsley. Add the "dressing" to the kale and parsley, and add drained garbanzo beans. Stir, and serve.
