Grilled Pineapple Salsa

The pineapple in this zesty bean salsa adds just a bit of sweetness of offset the heat from the jalapeno. Fabulous as a power up to any grill feast.

Ingredients

6 slices pineapple fresh
3/4 cup cilantro chopped
1 jalapeno pepper deveined, deseeded, diced small
2 tablespoons lime juice
1 15 oz can black beans drained, rinsed

Directions

Cut pineapple into 6 round slices.

If grilling pineapple, set grill to 300 degrees of direct heat. Grill pineapple slices for 2 minutes on each side. If using an oven, place your 6 pineapple rounds on a cookie sheet under the broiler for 5-7 minutes - until the top side starts to brown.

Chop pineapple into triangles. Drain black beans and wash in a colander until runoff liquid is clear. Mix beans, chopped onion, pineapple, minced jalapeño, cilantro and lime juice in a bowl and chill until served.
