Roasted Broccoli

This nutty take on broccoli is the perfect accompaniment to any Italian dish. 



Ingredients

  • 4 cups broccoli florets
  • 1/2 cup pecans , pecan halves
  • 3 cloves garlic , minced
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1-2 tablespoons Parmesan cheese , optional

Directions

  1. Preheat oven to 425.
  2. Rinse and trim the broccoli and put in a bowl. Blanch if you like it tenderer.
  3. Add olive oil, garlic, salt, pecans, and broccoli to mixing bowl.
  4. Mix, toss, stir.
  5. Spread mixture onto a baking sheet.
  6. Place in the oven for 8-10 minutes, or until broccoli is tender.
  7. Dish out.
  8. Optionally shave fresh parmesan on top.
