Smashed Potatoes

Smashed potatoes are great for breakfast with sliced avocado and Tomato Cucumber Salad

These hearty breakfast potatoes are a traditional Romanian breakfast dish. Power them up even more by adding other vegetables, such as red, yellow, orange bell peppers or onions.



Ingredients

  • 4 medium potatoes diced small
  • 2 cloves garlic minced
  • 1 cup water
  • 1 tablespoons olive oil
  • 1/2 teaspoon salt to taste

Directions

Mix potatoes, garlic, water, olive oil, and salt in deep skillet. Cover and cook on medium-high until potatoes start to brown.
