Spinach and Egg White Omelet

This simple omelet is quick to throw together in the morning. Perfect side to oatmeal!

Ingredients

3 large egg whites
1/2 cup spinach
4 large cherry tomatoes cut in half
1/4 cup onion diced
1/4 cup cheddar cheese low fat, shredded

Directions

Spray a small skillet with olive oil spray. Pour in the egg whites from 3 eggs. Add 1/2 a cup of spinach leaves, 4 cherry tomatoes cut in half, 1/4 cup chopped onion and 1/4 cup low fat shredded cheddar cheese.

Cook on low until all liquid is cooked and the tomatoes are tender...about 10 minutes.

Tips

You can use egg whites in a carton, which cuts out the work of having to separates the egg whites from the yolk.
