Zucchini Patties

These zucchini patties are easy to make, low calorie, and a nice Power Up with 4g of fiber in 2 patties.

Ingredients

2 2/3 cup zucchini squash shredded with skin
2/3 cup potatoes red, shredded with skin
1/4 teaspoon salt
1 teaspoon unbleached white flour
1 large egg whites
1 tablespoon lemon zest
2 teaspoons dill fresh, chopped
2 teaspoons chives fresh, chopped
2 teaspoon mint leaves fresh, chopped
2 teaspoons fresh parsley chopped
1/3 cup onion diced

Directions

Preheat the oven to 200 degrees.
Toss the salt in with the shredded zucchini and potatoes. Let sit for 10 minutes.

Place the shredded zucchini and potatoes in the middle of a paper towel and squeeze out any liquid. Repeat in a new paper towel if needed.

Spread out the veggie and sprinkle the flour on them.
Whisk together the egg, dill, chives, mint, parsley and lemon zest.
Add the onion and shredded veggies to the whisked mixture and stir together well. Divide in to 6 equal portions.

Using a large skillet over medium-high heat, place the portions in the pan and flatten to form a patty. You can also do a few at a time if you don't have a large enough skillet.

 

Cook each patty until golden brown on each side. Place the finished ones on a baking pan in the oven to keep warm until you're ready to serve them.
