Zucchini Squash Medley

This summer squash medley is easy to make year round, however it really does taste best in the summertime when the produce is fresh from the garden.

Ingredients

2 medium zucchini
2 medium yellow (summer) squash
2 medium red bell peppers
2 tsp Earth balance buttery spread whipped
1/2 teaspoon salt
1 small red onion coarsely diced

Directions

Coarsely chop your zucchini, squash, red onion, and red bell pepper. Add everything to a microwave safe glass bowl with a top. Microwave for 10 minutes, stir, then microwave in 5 minute intervals until the vegetables are tender. It took our dish 20 minutes total, but the squash was not fresh from the garden. You’ll want to serve warm with the meal.
