Katie’s Blondie Bars
These bars are an adaptation of Chocolate Covered Katie’s Snickerdoodle Blondies.
Ingredients
1 (15ounce can) garbanzo beans, drained and rinsed3/4 t baking powder
2 t vanilla extract
1/8 t salt
2/3 cup coconut sugar or brown sugar
1/4 cup quick oats
2 and 1/4 t cinnamon
Directions

Preheat oven to 350 degrees. Spray an 8x8 pan with cooking spray.

Blend all ingredients until very smooth in a food processor, and pour mixture into cooking pan.

Bake for 35 minutes. The blondies need to be a little undercooked when removed from oven. They will firm up as they cool, and you don’t want them to get hard.
